Reheat & serve:

  • Warm the proteins/beans:

    • Microwave: Beans and tinga in separate bowls, covered, 45–90 sec each; stir and heat to 165°F.

    • Stovetop: Small pan over medium, 2–4 min to 165°F.

  • Re-crisp the sopes shells:

    • Skillet/comal (best): Dry pan on medium-high, 1–2 min per side until hot and lightly crisp.

    • Oven: Directly on rack or sheet, 350°F for 4–6 min.

  • Assemble: Spread beans on hot sopes, add chicken tinga, then top with lettuce + pickled onions, sour cream, queso fresco, and salsa roja to taste.
