We roll tender chicken tinga into three warm corn tortillas and bathe them in our deep, cacao-and-chile mole. A cool drizzle of sour cream and a crumble of queso fresco bring balance and lift. On the side: creamy frijoles puercos crowned with more queso fresco, plus bright salsa roja to punch up each bite as you like.
